Chocolate Chip Peanut Butter Healthy Breakfast Muffins

No lie. These were hands down, the BEST muffins I've ever made.

Ok... I haven't made too many muffins in my life time but these were absolutely delicious. To be sure, I'm not really too much of a Reese's Pieces peanut butter cup fan- but these were very similar in taste and I had to stop myself from eating them. Since these are natural ingredients, this  is overall  a healthy muffin. Dense and rich it will be perfect for breakfast on the go. Pour hot joe in a thermo, grab a muffin and head out the door.  This recipe bakes 6-8 muffins
All the ingredients needed - Easy Peezy, Lemon-Squeezy

3/4 cup of peanut butter
1 large very ripe banana
1 large egg
3  1/2 tbsp of honey
1/4 teaspoon of baking soda
1 teaspoon of vanilla extract

Add chocolate chips of your choice later


Blend all the ingredients (except the chocolate chips) until you have a smooth batter.


You want to add the chocolate chips in by folding them lovingly into the batter with a rubber spatula or wooden spoon.

As for how many chocolate chips you should use... Never ask a choco-holic that question. I used close to half a bag. You can also add pecans or other nuts (if these happen to be on sale  and with a coupon of course).



Scoop up batter and dollop into an un-greased muffin tin.  Smooth batter with the of a spoon. You'll have to use a spoon ya'know, since you licked your spatula clean- you'll have to throw that in the sink/dishwasher.

When they're done let them cool and scoop them out of the tin. If the muffins haven't cooled, you'll loose some of the muffiny goodness to the bottom of tin and have lopsided muffins (as seen in my picture).
